I wanted to congratulate everyone who graduated, may it be a step closer towards reaching your goal. So being graduation week I had a few cakes to do. One of the people celebrating a graduations was my beautiful sister, Sarah. She graduated from UTA with her masters and of course I had to do it big! This cake was only one of my gifts to her for this great accomplishment in her life. I love you sister and know you will do great things in the work. Your touching people one life at a time. Congratulations again Sarah! This one is a cake I got asked to do for a graduate from UTD. The parents wanted a round cake and since his fraternity nickname is Mad Hatter I saw this as an opportunity to make it into a mad hatter hat. Congratulations Austin. And last but not least was the boyfriends graduation cake. Okay on this cake I was a little strapped for time and decorated it in 20 minutes prior to his graduation party. I still loved the way it came out! Congratulations Boyfriend!

Okay, this was my first go at a fairy cake. My mom used to do this type of cake for my sister and I when we were younger but with buttercream so she guided me though this one. I started off by cutting a hole in the cake where the doll would fit. Then, wrapping the bottom half of the fairy doll in plastic wrap as to not get it dirty in the cake. Decorated her top in fondant and let it dry. I then covered the cake in fondant and made a hole and stuck her in the cake. I finished it up with some decorations and tada my very first fairy doll cake.
This is to the wonderful lady who has put up with me for so long and who has been there at my every beck and call and who introduced me to baking and was there to help me through every project I had that lead late into the night. Your the best mother and hope you enjoy your birthday and birthday cake which was made into the wee morning and hecho con mucho amor! Happy Birthday Mommy!

Well, Tio here you go. Enjoy your denture cake! I was asked to do a torso cake with sexy lingerie. This was my first ever and it's not normally one I would do, but I was up for the challenge and I am here to give the customer what they want. This was the outcome. The lingerie is sparkly red and was inspired by Jessica Rabbit's red sparkly dress. Who doesn't wish they had a dress like that? This cake turned out bigger then I wished. The cake was made up of two 12 inch heart shaped pans because the only sphere pan I had for the boobies was a 6 inch pan. It wasn't until I had finished baking the hearts that I realized that I could of used smaller heart cake pans and just have made cupcakes for the boobies, but oh well, who doest enjoy left over cake. :)
The cake was vanilla with a Jack Daniels Whiskey glaze. The Jack glaze was a first for me, but the customer loved it so it was a success! My my my, it has been a long night but in the end I have prevailed. I am proud to say the xbox 360 cake is DONE! I could have not pulled if off by my self, with that being said, thank you boyfriend for helping me and taking over when I just about had it. :) Xbox 360 cake. Tada! Even though this seems to be an easy cake for the most part to do (besides all the detail) I must admit I did learn something very valuable from the cake. Never and I do repeat, NEVER ice a cake and stick it in the freezer over night and fondant it the next day with out letting it come to room temperature. It makes the fondant wet, sticky and when it started to dry it begins to crack because my cake was expanding.
Moral: Don't expect an easy looking cake to be easy because cakes do fight back! OR Don't forget you left your cake in the freezer. A girl from work asked me if I could do a scarface cake, but not just any scarface cake, a topsy turvy one, for a guy in his 30's. I was stumped on the design, I mean how can I do a topsy turvy cake manly enough for a guy and not just any guy one who likes scarface. This took some intense thinking and some help from my boyfriend. Low and behold the final cake after many hours of debating on what to do. It looks nothing like my first draft. LOL. Small note: it's not all cake, she only needed to feed about 20 people but still wanted a 3 tier topsy turvy cake.
